What Asado Really Means
In Argentina, asado isn't an event you plan – it's a ritual that simply happens. On Sundays, on weekdays, in winter as in summer. There's no rush at an asado. The fire sets the pace, not the clock.
At the center stands the Asador – the person who tends the fire, reads the meat, knows when it's time. Everyone else waits, talks, is simply present. That's exactly what sets asado apart from grilling as it's known elsewhere: it's not about getting full quickly. It's about having time together.
